I'm afraid that any numbers like this would probably be anecdotal.
The speed of sendmail is going to depend on the speed of various bits
of the hardware, how big the incoming mail is, how much of the
incoming mail is going to lists, etc., etc., etc.

Here's an anecdote for you...  A quick peek at the logs shows that
this group's web/mail server has been handling a couple thousand
pieces of email a day this month.  (The most for any single day seems
to be 2444 on Jan. 8.  The slowest day was the first with only 872.) 
That's without adding any really noticeable load to the box...

Oh, and I don't think BIND will let you log lookups on any one record
(you probably wouldn't want to even if you could), so numbers for
lookups are probably going to be impossible to find.
